Inspired by Distiller Hans' brewing experiments, he applied the same techniques to this gin as he did to his smoked porter, aged in a red wine cask for its fruity notes.
Expert in all things gin, Sipsmith distiller Hans is also a keen brewer. Whilst experimenting at home this summer, he created a smoked porter with wood chips. Rich, but smooth and refreshing, he found it worked particularly well in a period of unusually hot weather. Why not take this idea and apply it to a gin for the summer months, thought he? Quite right.
Our distillers macerated the botanicals (including prunes, peated malt and chocolate malt) in the still overnight, then added fresh orange peel into the vapour chamber the following morning. Reminiscent of the Gin Craze, when gin was stored in barrels in gin palaces, the liquid was then briefly aged in a red wine cask for a month to bring in the fruity notes.
Tasting Notes:
The Nose: Light smokiness, paired with soft fruits and nut
The Palate: Roasted juniper berries and blackberries.
The Finish: Burnt pine and black pepper.

Smoked Martinez
This gin lends itself perfectly to this classic serve.
50ml Smoked Aged Gin
25ml Sweet vermouth
2 dashes Angostura bitters
Cherry, to garnish
Stir all ingredients down over ice, and serve up (without ice) in a coupette. Garnish with a cherry placed in the liquid
Palace Sour
Citrus and smokiness pair in beautiful harmony in this sour.
50ml Smoked Aged Gin
25ml Lemon juice
10ml Sugar syrup
10ml Port
1 Egg white
Lemon twist to garnish
Combine all ingredients in a shaker, dry shake and wet shake. Double shaking is key to help the ingredients properly emulsify and create a frothy serve. To perfect this technique, add your ingredients to a shaker and shake for 20 seconds or so. Then, open it up, fill with cold ice, seal, and shake again. Fine strain into a rocks glass over ice, and garnish with a lemon twist
