Everyone appreciates a well-made drink, so it’s no surprise that a minty mojito is one of the most popular cocktails in the world. But we couldn’t help wondering: why should white rum have all the fun? So our skilled distillers set to work in their lab to come up with a way of handcrafting a gin twist on the classic concoction. Distilling mint leaves and stems with our classic London Dry Gin recipe and adding fragrant, fresh lime peel to the vapour chamber resulted in this delightfully zesty spirit.

For a refreshing sip, add to an ice-filled highball glass and top with Mediterranean tonic, a wedge of lime and a mint-sprig garnish – perfection.

The Nose: Fresh, inviting citrus with a light menthol bite.

The Palate: Light herbal pine, bright mint and citrus.

The Finish: Dry with a light bitterness that pairs with the zing of the lime.

Mint and lemon add a refreshing zing to this sparkling sip that’s topped with champagne.

20ml Victorian Mojito Gin
5ml Sipsmith Sloe Gin
10ml lemon juice
5ml sugar syrup
Champagne, to top up
Mint leaves, to garnish

Shake the Victorian Mojito Gin, Sipsmith Sloe Gin, lemon juice and sugar syrup together in a shaker with ice. Strain into a chilled champagne flute, top with champagne, and garnish with a mint leaf.

50ml Victorian Mojito Gin
20ml lime juice
10ml sugar syrup
Soda water

Mint sprigs and lime, to garnish. Combine the first three ingredients in a highball glass and half-fill with cubed ice. Give it a quick churn, then top with crushed ice and soda water. Garnish with a mint sprig and lime.
