We are delighted to announce that Sam Wilkes-Green, bartender at Present Company in Liverpool, is the inaugural winner of the Sipsmith Cygnus Cocktail Competition. The Competition invited bartenders from around the UK to craft the ultimate Sipsmith cocktail reflecting their distinct flavours and botanical preferences. The coveted first prize? The opportunity to craft a sensationally sippable gin inspired by their cocktail recipe.
Inspired by Sipsmith Master Distillery Jared Brown’s historical investigations, Sam’s winning creation celebrates the rich distilling traditions of the UK. Drawing from his childhood at Low Dykes Barn, Sam crafted a cocktail made with homemade apple and bay leaf cordial, and sweetened with clover honey. The addition of a peppercorn distillate, expertly blended with Sipsmith V.J.O.P and Sipsmith Lemon Drizzle Gin. A sparkling finish of Cremant de Loire added brightness to this exceptional cocktail. For a simple serve, we think that this gin is exquisite enough to be sipped neat.

55ml Cygnus Gin
15ml White Rum
45ml Apple cordial
Sparkling wine, to top
To recreate this sensational sip at home, prepare your glassware by chilling a coupe glass. Combine your Cygnus Gin, white rum and apple cordial into a Boston shaker and top with ice. Shake until cold to touch and then strain into your coupe glass and top with your preferred sparkling wine.
Cygnus Martini
60ml Cygnus Gin
15ml Dry Vermouth
5ml Fino Sherry
Twist of lemon, to garnish
Stirred or thrown to taste and then strained into a chilled martini glass. Garnish with a single bay leaf or a twist of lemon.
To create the Cygnus Martini, firstly ice a martini glass. Combine the Cygnus Gin, Dry Vermouth and Fino Sherry into a Boston Shaker and throw your martini to your preferred dilution. Strain the liquid into your iced martini glass and garnish with a bay leaf or twist of lemon.
