With that spirit of the unexpected in mind, we present you with a gin that offers more than meets the eye —(Not) Pink Gin—looks like London Dry in the glass, but on the nose and palate it reveals a burst of ripe raspberry and fragrant vanilla. Serve in a spritz, or dress it up in a cocktails, just be sure to sip this glorious gin outdoors (with an umbrella tucked away in your bag, mind—you can never be too sure).

Scent is the sense that’s most closely linked to memory: one whiff of this gin, and you’ll be transported back to childhood summers spent picking berries from their brambles. Pink in everything except colour, our (Not) Pink Gin was inspired by the lushness of mid-summer, of fruit coming fully into season; on the nose it’s bursting with raspberries, and preserves, and a touch of perfumed vanilla. It’s tricksy, mind—unlike many of the pink gins currently found on the shelf, it’s not dyed or flavoured artificially, or sweetened. To preserve the character of the gin, our talented distillers employ an array of delectable botanicals (including fresh and dried raspberries, raspberry leaf, vanilla pods, and thyme), and add nothing more once distilling is complete. The result is a deceptively bold summertime gin that’s suitable in spritzes, Negronis, or simply mixed with tonic and garnished with a sprig of thyme and a raspberry or two.

The Nose: Ripe raspberry and summer-fruit notes impart the impression of sweetness; delicately botanical and floral

The Palate: Aromatics of sun-warmed berries and vanilla complement the gin’s dry, pleasingly peppery character

The Finish: A long, warming finish whose fruit character fades into herbal, Mediterranean thyme

(Not) Pink Gin Spritz
50ml (Not) Pink Gin
20ml lime juice
10ml elderflower cordial
100ml Prosecco

Build in an ice filled goblet, garnish with a slice of apple and raspberries.

(Not) Pink Gin Negroni
30ml (Not) Pink Gin
20ml Bianco Vermouth
10ml Cointreau

Stir all ingredients over ice and strain into an ice filled rocks glass. Garnish with an orange twist.
