In the depths of the post-holiday drizzle, our thoughts here at the Distillery have been roaming to warmer climates. Daydreaming about Caribbean beach bars, tropical cocktails and long, sunny days always makes the sunshine feel a little closer during the seemingly never-ending London winter. With this in mind our distillers set their minds to creating a Caribbean inspired tipple. Dried lime peel and scotch bonnet chillies were macerated in the still overnight, and then added to the vapour chamber along with fresh lime peel, for the distillation process. The gin is then rested on fresh pineapple for 3 days to finish off this full bodied, warming and tropical gin.
Best enjoyed sipped from a tall glass, topped with Mediterranean tonic water and completed with a generous slice of pineapple.
The Nose: An initial hit of hot pepper followed by bright citrus and warming spice.
The Palate: Full bodied, bright, tropical fruit flavours balanced with spicy citrus.
The Finish: A fresh spice redolent of BBQ’d pineapple, finishing with a lingering warming pepper.
40ml Stir It Up Gin
10ml crème de cassis
20ml lime juice
10ml sugar syrup
Fill a stirring glass with ice, add all ingredients and stir. Strain into a tall glass over ice and garnish with a lime wheel.
Marley’s Mai Tai
30ml Stir It Up Gin
20ml pink grapefruit juice
10ml sugar syrup
Shake all ingredients in an ice filled cocktail shaker and strain into a rocks glass over crushed ice. Garnish with a wedge of pink grapefruit.
