For those who are partial to dipping a mallow-tipped fork into the crackling open flame, this is the tipple for you as the nights draw in.

Whilst distilling a toasted marshmallow might seem like a brilliant idea, capturing the sweet, buttery essence of this sticky treat in a gin wasn’t quite that simple. Never being one to give up, our Ginnovations Manager Ciarán explored other techniques to achieve the nutty, caramel taste he was looking for. He stumbled across a method often employed by Heston Blumenthal when creating his culinary masterpieces: the Maillard reaction. As he caramelised brioche, Ciarán was able to create a stock that replicated the distinct flavour of a toasted marshmallow. Using the stock and macerating botanicals such as vanilla, pan-toasted oats and fluffy, roasted croissants, Ciarán vapour-infused the liquid with orange peel, creating a perfectly sweet and warming gin liqueur to enjoy this festive period.

For the ideal toasty tipple in the winter months, simply add 50ml Toasted Marshmallow Gin Liqueur to your favourite highball glass. Then top it with soda water and finish with an orange twist as your garnish

Tasting Notes:
The Nose: Caramelised vanilla and candied orange peel.

The Palate: Sweet juniper, viscous vanilla and a light warming spice.

The Finish: A soft nuttiness, leading to a hint of toasted spices and light orange peel.

This festive twist on a classic gin cocktail perfectly compliments our sweet gin liqueur.

35ml Toasted Marshmallow Gin Liqueur
15ml Cointreau
20ml lemon juice
10ml sugar syrup
1 egg white or vegan alternative (such as chickpea juice)
Soda water, to top up

Combine the Toasted Marshmallow Gin Liqueur, Cointreau, lemon juice, egg white and sugar syrup in a shaker. First, dry shake the ingredients, then add ice and shake again. Strain the cocktail into an ice-filled highball, top with soda water and garnish with a toasted marshmallow

Toasted Old Fashioned
Our sweet gin liqueur is the perfect antidote to this naturally bitter cocktail.

40ml Toasted Marshmallow Gin Liqueur
20ml port
2 dashes of bitters
Nutmeg or chocolate shavings, to garnish (optional)

Combine the gin, port and bitters in a mixing glass, stir down over ice and serve in a chilled rocks glass over ice. Garnish with a sprinkling of nutmeg or chocolate shavings, as you please.

  2. I had a White Christmas Lady made for me last night. It was simply delightful. I will be buying a bag of marshmallows to accompany more of these cocktails. A glass of fabulous festive fun!

  3. This is not a sweet liqueur by any means and the toasted marshmallow is very subtle. The White Christmas Lady cocktail brought the toasted flavour to the fore slightly and this proved to be the most successful way of serving it. But I wouldn’t have known it was toasted marshmallow if it hadn’t said so on the label.

  4. I didn’t get any toastiness with this one, but it was still quite pleasant and not sickly sweet. There was a nice vanilla note in this one which gave the hint of marshmallow, but I wouldn’t have known it was marshmallow from the taste alone.
