Wild Berry Gin

We’ve harvested hedgerows and fruit trees to come up with a refreshingly bright gin that’s literally bursting with berries. 

Having macerated the botanicals overnight in our experimental still, dried raspberries are added to the pot prior to distillation, while fresh orange peel is popped into the vapour chamber. 

For a simple serve that allows this gin’s brilliant berries to really shine through, pour 50ml Wild Berry Gin into a highball that’s filled with ice and top with Mediterranean tonic. Then garnish with a plump blackberry and serve.

Tasting Notes:

The Nose: Juicy forest fruits, with layers of fresh orange peel and floral pine

The Palate: Rich earthy pine gives way to poached plums and rich roasted cherry, before a pop of fresh cranberry 

The Finish: Bitter orange and candied orange mingled with warm spiced juniper

Summer Sling

  • 50ml Wild Berry Gin
  • 10ml sugar syrup
  • 20ml lemon juice
  • 40ml pomegranate juice
  • cloudy lemonade, to top
  • mixed berries and a lemon twist on cocktail skewer, to garnish 

Combine the gin, sugar syrup and lemon juice in a highball and top with ice before slowly adding the pomegranate juice. Top with lemonade before adding the garnish. 

Wild French Martini

  • 35ml Wild Berry Gin
  • 50ml pineapple juice
  • 25ml blackberry liqueur
  • 2 blackberries on cocktail skewer, to garnish

 

Combine all the ingredients in a shaker and dry shake without ice. Then add ice to the shaker to wet shake, double strain into a coupe and garnish.
